A Rimini per “Al méni” un circo mercato dei sapori: chef da tutto il mondo capitanati da Massimo Bottura

12 grandi chef dell’Emilia Romagna incontrano 12 grandi chef internazionali sotto la guida dell’Oscar della cucina mondiale Massimo Bottura. Tra show cooking e degustazioni di piatti, i migliori chef al mondo trasformeranno con le mani e col cuore i grandi prodotti della buona terra della via Emilia. È il grande circo dei sapori “Al mèni”, un tendone colorato di 1500 mq allestito in piazzale Fellini, fra il Mercato delle eccellenze dei prodotti della “buona terra” e il lab store creativo Matrioska che unisce innovazione, artigianalità e design. Sabato 21 e domenica 22 giugno 2014 il cuore di Rimini si trasforma in una grande festa del gusto dal nome “Al méni”, ovvero ‘le mani’, dal titolo di una poesia di Tonino Guerra. Il Circo 8 e ½, un grande tendone colorato di 1500 mq allestito davanti al Grand Hotel, ispirato a Fellini e alla sua visionarietà onirica, ospita 24 maestri della cucina internazionale. 12 chef, i migliori del mondo, si confrontano con 12 grandi cuochi dell’Emilia Romagna sotto la supervisione di Massimo Bottura, vincitore del White Guide Global Gastronomy Award 2014 e premiato con tre stelle Michelin attribuite al suo ristorante di Modena. Al lavoro dalle 12 fino a notte, manipolando i migliori prodotti del territorio, tra show cooking e degustazioni, i cuochi creano in diretta piatti unici a prezzi accessibili, trasformando con le mani e col cuore i grandi prodotti della buona terra Emilia Romagna. I riflettori sono puntati su quella che Bottura definisce “la dispensa dell’Emilia-Romagna”, i prodotti che sono, insieme all’artigianato, il patrimonio di bellezza della regione e delle persone che l’hanno costruito, lavorando all’insegna della manualità, passionalità, genialità e ospitalità che li contraddistingue. Accanto al circo, sul lungomare sino a piazzale Boscovich, dalle 10 alle 23, è allestito un percorso del gusto tra piccoli e grandi produttori agricoli e case vinicole. Un vero e proprio Mercato delle eccellenze con i migliori prodotti dei contadini e degli artigiani del gusto della ‘buona terra’ emiliano romagnola – un territorio che ha il record di prodotti a denominazione d’origine – che assieme a quelli dell’artigianato hanno reso celebre in tutto il mondo il made in Italy lungo la Via Emilia. Dai vini al Parmigiano reggiano, dall’aceto balsamico tradizionale al prosciutto crudo, dal culatello di Zibello alla mortadella, dai formaggi a latte crudo agli olii, dal pesce azzurro allo scalogno. Il primo mercato per conoscere, toccare con mano e acquistare i prodotti dei piccoli grandi giacimenti enogastronomici dalla via Emilia al mare. Piazzale Fellini, davanti al Circo 8 e ½, invece è invaso dagli artigiani e dai creativi per creare un luogo denso di storie e invenzioni, arte e originalità. È Matrioska, il lab store itinerante dell’artigianato, del design, degli antichi e nuovi mestieri. Uno spazio espositivo poliedrico che, come la bambola russa, racchiude tante incognite frutto della creatività, dell’arte e della ricerca col marchio “fatto a mano”: dalle biciclette alle ceramiche, dai vimini alla grafica, dalle teglie in terracotta alle scarpe, dagli arredi all’abbigliamento, dagli accessori alle lampade a tutto ciò che unisce innovazione e artigianalità. Non potevano mancare i vini di qualità del territorio da degustare all’enoteca di “Al mèni”, organizzata in collaborazione con Enoteca Emilia Romagna, Banca del vino e Slow Food Emilia Romagna. Il Circo 8 e ½ ospita, accanto agli show coking degli chef stellati, anche una selezione di circa cento etichette regionali, servite al bicchiere dai sommelier della Fisar, e una selezione di birre artigianali tra i migliori produttori selezionati dalla guida delle birre di Slow Food proposte dai mastri birrai in persona. Inoltre acque e succhi di frutta biologici di provenienza del territorio. Domenica 22 giugno i cancelli del Grand Hotel si aprono per un picnic speciale: la déjeuner sur l’herbe organizzata per l’occasione nei giardini dello splendido Hotel liberty avvolti dall’atmosfera retrò che caratterizza la location. Si possono degustare, su prenotazione, la colazione/pic nic preparata da Claudio di Bernardo, chef del Grand, Hotel in collaborazione con Massimo Bottura e gli chef di Al Meni. «Non c’è al mondo un’altra strada come la Via Emilia che da 2.000 anni unisce dieci città ricche di eccellenze. Qui da noi, la gente ha preso a mano la terra e ne ha fatto ceramiche di pregio; ha preso a mano il ferro e ha costruito motori rombanti – afferma Massimo Bottura. Cose che succedono nella terra di Verdi e Fellini, della Ferrari e della Ducati. Io ho cercato di rappresentarla con un piatto fatto con un elemento unico che ti racconta il territorio: il Parmigiano Reggiano. Sono i migliori artigiani del nostro territorio ed è il tempo che passa, che scorre lentamente, sono le mani dei casari che trasformano il latte crudo, comprimono 500 litri di latte dentro 40 kg di forma». «Provate a immaginare che per due giorni la via Emilia si trasformi in un enorme scivolo che convogli, travolga e faccia scendere a Rimini, tutte le eccellenze della Regione – dice il Sindaco di Rimini Andrea Gnassi. Un incalcolabile patrimonio di bellezza che ha la sua forza nei cuori e nelle mani speciali che continuamente lo alimentano. Vogliamo dare visibilità a prodotti generati da un inimitabile DNA antropologico di una terra con l’anima, con i suoi tratti riconoscibili che hanno un valore strategico non solo per noi ma per l’Italia e il mondo intero.”. La manifestazione ideata dal Comune di Rimini e Massimo Bottura, in collaborazione con CheftoChef emiliaromagnacuohi e Slow Food Emilia-Romagna, fa parte delle prove generali che intendono proiettare il meglio delle espressioni artistiche, produttive e gastronomiche di Rimini verso l’Expo di Milano 2015.

“Al Mèni”: a circus of flavours with chefs from all over the world led by Mr Bottura On 21st and 22nd June, Piazzale Fellini is playing host to a festival of culinary delicacies and products made “with hands and heart”, in which shining stars in the culinary field from all over the world will take part. Cooking shows, a market with the best local products and a lab store with craftsmen and artists: in the shade of a big top recalling Fellini, a remake of Otto e mezzo in the context of food and wine will be performed. The best chefs from all over the world, led by Massimo Bottura, will meet up in Rimini to cook the local delicacies provided by farmers and producers. It’s about the circus-market “Al Mèni”, that is “the hands”, so called after the title of a poem by Tonino Guerra, since the basic ingredients of this new great event dealing with haute cuisine and high-quality traditional handicraft will be all things made with hands and heart. On Saturday 21st and Sunday 22nd June 2014, the heart of Marina Centro will turn into a great circus of flavours, accompanied by a market with the best local products from Emilia- Romagna – the Italian region with the highest number of products with designation of origin – as well as a lab store with the best creative handicraft. Key players are the dishes of the 24 best chefs in the world (12 Italian and 12 international chefs), who will work from 9 in the morning to midnight in order to shape the incredible local high-quality products and show the public a unique cuisine as well as a tasteful variety of the best local handicrafts. This leads to the first edition of what can be called Circus of flavours in Rimini. A big colourful top of 1.500 m2, set up at the roundabout of Piazzale Fellini in front of Grand Hotel, a tribute to the dreamlike spirit of the famous film director, will host Italian and international chefs led by Massimo Bottura, the Emilian cook who won the White Guide Global Gastronomy Award 2014 and was awarded three Michelin stars thanks to his restaurant in Modena. All the chefs will carry out cooking shows and tastings while making unique dishes in real time at affordable prices for everyone. Well-known and future chefs as well as main courses from all over the world will be in the spotlight. The chefs will draw on the best products from what Mr Bottura calls “the cupboard of Emilia-Romagna” and will prepare great dishes. Next to the circus of flavours there will be a true market with products of farmers and producers, where you can enjoy, taste, buy – thus using all the five senses – the best local products, among which cheeses, raw milk, dry sausages having been patiently prepared, genuine wines, rediscovered fruit varieties, craft beers, piadina and squacquerone, local fish species, mushrooms from the Apennine, the best scallion in the world, rice from the plains in Ferrara, to name but a few. Local products will be offered together with art and handicrafts, which will come together in Piazzale Fellini for the special edition of the lab store called “Matrioska”. Thereby, the wealth of regional beauties and all their creators will be redefined in a creative way. Such creators have been working with hands and heart, thus capitalising on manual skills, passion and genius, some of their main peculiarities. All those who contributed to the notoriety of made in Italy and are established along the Via Aemilia will meet up in Rimini for two days. There is no other road like this worldwide, since the Via Aemilia has been a link between ten cities of Emilia-Romagna for 2200 years. This region is a land of talents: from Verdi to Fellini, from Ferrari to Ducati, not to mention the food and wine tradition of this region, with the highest number of products with designation of origin. A cocktail of treasures that can be found along the Via Aemilia on the occasion of the “Al Mèni” event. The Via Aemilia is a link between Piacenza and the Rimini seaside. The meeting will last two days and will take place on the seafront Tintori as far as Piazzale Boscovich, where a path of flavours will be set up involving big and small agricultural producers, wineries, local products. Meanwhile, Piazzale Fellini will be flooded with craftsmen and creative people willing to create a place rich in stories and inventions, art and originality. Furthermore, on Sunday 22nd June, the gates of Grand Hotel will open for a special picnic: the déjeuner sur l’herbe, organised for the occasion in the gardens of the stunning Liberty-style hotel, whose retro-style décor and picnic baskets, but above all the desire to be together will create an atmosphere of luxury inspired by Fellini’s Dolce Vita. As a matter of fact, the whole event draws inspiration from the Maestro, Federico Fellini, who acted worldwide as a spokesman of tradition, phantasy, local creativity, so that Rimini took centre stage in the international arena. Hence the idea to propose the remake of Otto e mezzo in the context of food and wine, too. The event, in partnership with Slow Food and Chef to Chef, is part of a general rehearsal, whose aim is to project the best artistic, productive and food expressions of Rimini towards Expo Milan 2015. Massimo Bottura is very attached to Rimini and had already made his contribution to another project, that is the conception of Rimini Street Food, the first guide to street food, which can be tasted at the stands selling the delicious piadina from Romagna. The event is introduced by another date with the so-called signature cuisine (Italian haute cuisine). “Spessore”, a four-day event during which cooks from all over Italy will make several dishes to be served to customers who will be able to obtain a table, is scheduled from 17th to 20th June at the restaurant “Povero diavolo” in Torriana di Rimini. “Al Mèni – so the Mayor of Rimini Andrea Gnassi – is the first event which aims to project our best productive and food expressions towards Expo Milan 2015. We want to give visibility to products arising from the inimitable anthropological DNA of a land with a soul, with its recognisable peculiarities having a strategic value not just for us, but also for Italy and the whole world.
